Banana bread

Ingredients

1/2 cup butter
1 cup sugar
2 eggs
1 "generous" tsp vanilla extract
1.5-3 cups overripe bananas
2 cups flour
2 tsp baking soda
1 "large dollop" (1/4-1/3 cup) sour cream
[optional] 1 cup chopped walnuts and/or mini chocolate chips

Procedure

  1. Combine butter, sugars, eggs, and vanilla in a large bowl.
  2. Add bananas and make consistent (with hand mixer unless you want a workout).
  3. Separately, sift together flour and soda.
  4. Add powders to the wet mixture.
  5. Stir in sour cream, and nuts or chocolate chips if desired.
  6. Pour into one regular or two small bread pans.
  7. Bake at 350°F for 60 minutes for a large loaf; 25-45 minutes for smaller loaves.
